Black Bean Chicken Salad

Ingredients Used:-

  • Torn lettuce – 6 cups.
  • Cubed and cooked chicken breast – 1 and a half cup.
  • 15 ounce can of rinsed and drained black beans – 1.
  • Chopped and seeded tomatoes – 1 cup.
  • Chopped green pepper – 1 cup.
  • Red onions, sliced – ½ cup.
  • Shredded and reduced – fat cheddar cheese – ½ cup.

Ingredients for the Lime Vinaigrette

  • Minced fresh parsley or cilantro – ¼ cup.
  • Chopped and seeded tomato – ¼ cup.
  • Cider vinegar – 1 tablespoon.
  • Canola or olive oil – 1 tablespoon.
  • Grated lime peel – ½ teaspoon.
  • Minced garlic clove – 1.
  • Salt – ¼ teaspoon.
  • Pepper – ¼ teaspoon.
  • Chili powder – ¼ teaspoon.

Instructions

  • Take a large serving bowl. In this, combine the onion, green pepper, cheese, lettuce, tomatoes and the beans.
  • Next, combine all the vinaigrette ingredients in a food processor or a blender. Process all these ingredients until the mixture appears smooth in texture.
  • Pour this all over the salad and toss the salad to coat.
  • Enjoy your salad.
